Here is a recipe that is fast and vegan, with a lot of health benefits. The chickpeas are a wonderful source of complex carbohydrate and protein. Plum tomatoes have cancer fighting agents and parsley helps to detox the liver and satisfy the taste buds. And the fresh corn is a sweet vegetable that will help curb sugar cravings later in the day. Add to that the antioxidents, the good quality fats of the olive oil and pecans, and you have a plateful of nutrition.
Raw Corn and Tomato Salad with Parsley Pesto:
Ingredients:
2 Cobs of Fresh Corn
2 Plum Tomatoes
1 cup Chick Peas
2 Handfuls Flat-Leaf Italian Parsley
2 TB Extra Virgin Olive Oil
1 TB Raw Pecans
1 TB Red Wine Vinegar
Salt and Pepper
Cut the corn kernels off the cob. Add diced tomatoes and chick peas (we used dried that we cooked in kombu to make it easier to digest but you can use canned too). Season with salt and pepper.
In a food processor, combine parsley, pecans, and vinegar with a generous pinch of salt and some pepper. Pulse, and stream in olive oil.
Combine all the ingredients, and enjoy alone, or on top of some mixed greens!
