Dinner was simple but yummy. I made one of my ‘specialities’ (I use that term very loosely) – Vegetarian Chilli.
Ingredients: vegetarian Quorn mince, mixed beans, pepper, onion, chopped tomatoes and chilli powder. With a side of brown and wild rice.
I love making chilli because it’s essentially just chucking all the ingredients in a wok and stirring – so easy.
I realised after I took this photo that the plate is lacking in greenery – but I had a massive salad for lunch, so I think I can be forgiven ;).
